Truffle has to be the king of ingredients, the decadent one that makes every other ingredient feel special. Truffle alone can turn the simplest of dishes in to a delight for the senses, pasta, meat, cheese and even seafood.
Being Italians, we obviously think our Truffles are the best in the world, so what else would we choose to serve our decreeing customers other than Italian Black Summer Truffles. We’ve recently started to use Carpaccio di Tartufo from the Toscobosco estate which really can’t be beaten. Delicate yet deep and nutty, thin slices of golden black edged truffle bathed in extra virgin olive oil to distill and enhance the earthy Italian flavours to perfection.
As much as we’d like to use it on everything we serve, we’ll be reserving it for dishes that really highlight the flavours, beautifully fresh scallops with spinach and sun dried tomatoes for instance, or our Penne All’Amatriciana with an extra special twist maybe…
